This is my first attempt at Souffles.

Not so bad, I would say.
My observations:
-I didn't realize they would taste so much like egg. I know they were made of egg, but for some reason I thought the souffle would taste more like pudding.
-It didn't rise like I thought they would. Also, two of them fell. :-(
-Souffles are still good the next day for brunch.
-I simply love The Art of Simple Food.

I've never made them... Is that the title of the book you are using?
