Everything-But-The-Kitchen-Sink Shepard's Pie


Some days call for a big dose of comfort food. Today is one of those days. It's snowy, and the beginning of a three day weekend. It was really difficult going to work today. I didn't even mention that both Josh and I forgot that today is our anniversary, SIX years. So I made a big helping of Everything-But-The-Kitchen-Sink Shepard's Pie.

I browned some thawed hamburger, added onions, and then a helping of mixed veggies. Then I put everything into a casserole, topped it with cheddar cheese, then mashed potatoes, and finally Mozzarella cheese. In a preheated oven, I browned the pie until thoroughly heated. Yum!

(I really just needed to get rid of a few things in the refrigerator.)

Mmmm, that looks so yummy. I haven't made Shepperd's Pie in so long. I think you just inspired me!
