Who moved my cheese?

I have a really great friend, Stef that definitely makes my work hours more interesting. We also like to go on double dates with our honey buns.

Other than her boyfriend, Jeremy, her main interests include all things rodents.

Boy, Does she have rodents.

17 mice, give or take
2 hedgehogs
1 Guinea pig :-)
1 Buddha Hamster

Recently, She became a rodent Grandma. Her mice had a bunch of babies. They are so freakin' cute!

I just thought I would take a second to Congratulate her. I know that Stef and Jeremy are both excited about the new additions to their home. (Please visit her blog.)

I also tried to debunk that fact that mice like cheese. I thought for sure that was a misconception. I thought cheese was bad for them.

I was WRONG.

Apparently it's okay for mice to eat cheese, in small quantities. It's too high in fat.

Bring on the Gouda.

That leads me to my Cheesy Curry Cauliflower.

This was interesting, but good in small quantities. I have been trying to develop a more diverse vegetable repertoire.

Cheesy Curry Cauliflower in Vegetarian Cooking by Roz Denny and Christin Ingram.
1 bag of frozen cauliflower, or fresh is in season
1 medium onion, sliced
2 hard boiled eggs, peeled and chopped
3 tbsp whole wheat flower
2 tbsp butter
2 cups milk
1/2 dried thyme
salt and pepper to taste
4 oz of cheddar cheese
panko bread crumbs

1. Prepare the cauliflower and onion in boiling water until tender.
2. Arrange in a shallow ovenproof dish and scatter the chopped egg over it.
3. Make a roux of flour, and butter. Add the milk and curry powder. Stir until boiling. Stir in the thyme and salt and pepper.
4. Pour the sauce over the cauliflower, scatter the cheese and bread crumbs over it.
5. Brown in oven until golden and brown.

It suggests that you serve it with crusty bread. Although this sounds delicious, we made sauteed chicken breasts with Balsamic Vinegar, Bread crumbs, olive oil, and sprinkled, crushed almonds.
